Jinjer's Cookies

About the Recipe

Other optional ingredients are chocolate chips, dried cranberries, banana, nuts or anything else you prefer.

Ingredients

  • 1/3 cup of maple syrup (no added sugar)

  • 1/4 cashew butter (or any nut butter of your choice)

  • 2 tablespoons vanilla

  • 1 tablespoon cinnamon

  • 1 egg

  • 1 cup + 1 tablespoon gluten free oats

  • 1/2 cup almond flour

  • 1 pinch of salt

  • 1 teaspoon baking powder

  • 1 teaspoon flaxseed

  • 1/4 cup coconut sugar (optional)

  • 1/2 cup raisons (optional)

Preparation

Step 1


Mix dry ingredients in a bowl. Preheat oven to 350.



Step 2


Put wet ingredients in a Bullet to mix



Step 3


Pour wet in to dry and fold



Step 4


On a cookie sheet (can use aluminum foil with parchment paper on top) scoop out batter. Should make @9 cookies. Bake 350 @24-30 depending on how crunchy you want cookies. Softer cookies check @15 minute mark.
